Super Bowl Snacks


Another Super Bowl is upon us! Time to settle in for the game, the halftime show, the commercials...but how are you fixed for snacks?

If you need snacking ideas, the library can help. All copies of The Pioneer Woman Cooks: Recipes from an Accidental Country Girl by Ree Drummond are currently checked out, but if you are unfamiliar with her website, be sure & check it out-she has an entire section devoted to appetizers & her February 5th post details her Super Bowl plans!

Yum...I've reserved a copy of "Hellish Relish", looking forward to trying out the recipes.

Today we tried and enjoyed a "Big-Game Party Pleaser" recipe from a grocery flyer.
"Paxton Meatballs":
-lb of frozen meatballs
-can of cranberry jelly
-bottle of chili sauce
Heat in crockpot 4 hours.

This timely post inspired me to try another Party Pleaser recipe for Jalapeno Poppers.
-cream cheese
-grated mozzarella
-grated pepper brick
-southwest seasonings
-fried/drained/crumbled bacon
-fresh jalapenos
-bread crumbs
Mix all ingredients except chiles and bread crumbs. Wear gloves to prepare the chiles! Slit each chile lengthwise; remove all seeds and membranes. Stuff 1 T cheese mixture into each half chile. Arrange peppers cheese-side-up on baking sheet; sprinkle with bread crumbs. Bake at 300 degrees.
Choose baking time by how "hot" you want the chile to taste:
- 10 minutes for very hot
- 20 minutes for hot
- 30 minutes for medium
- 40 minutes for mild
